Tasting note
A wonderful golden yellow color. Consistent, dynamic perlage. Bouquet with notes of yellow fruits (nectarines) and ripe, densely concentrated citrus fruits (lemons). There are also sweet notes of pollen/flowers, which are reminiscent of almonds and harvest aromas. An extremely fruity, complex wine, pure, aromatic and wonderfully intense with light smoky notes. On the palate, it is smooth, velvety, rich in wine and juicy. The almost salty effervescence is integrated into a densely concentrated, generous texture. A well-balanced, elegant champagne with a nice balance of substance and crisp, chalky freshness. Powdery, saline and beguilingly fresh! Smoky notes slightly influenced by wood make for a long, deliciously chiselled finish.
Culinary recommendation
Goes well with fine seafood such as fresh oysters, scallops or lobster with lemon butter. Creamy cheeses such as aged brie or mild Comté also go well with the elegant perlage and fine acidity of this champagne. For a sophisticated combination, it can also be served with a light sushi menu or an appetizer with salmon tartare and avocado.
