Tasting note
Garnet red color with brick orange shades that intensify over time. Intense and complex perfume, yet delicate and ethereal: warm, full and dry.
Culinary recommendation
Goes well with beef, game and stews such as beef steak, lamb, veal, rabbit, wild boar and deer, ideal with medium-aged or old cheeses.
Vinification
Fermentation in stainless steel tanks at a controlled temperature of 28°. The must is in contact with the skins and seeds for 15 days. The wine ages in French barriques for 36 months and in the bottle for 6 months.
