Tasting note
A refreshing, subtle and generous Sancerre white wine with pale yellow reflections, an intense and ripe aromatic bouquet and an unforgettable, chalky mouthfeel that leaves a lasting impression. This wine complements the fine aromas of fish dishes of all kinds with remarkable finesse.
Vinification
On the 20 to 25 degrees steep slopes of Chavignol's three hills, the work is as complex as the Sauvignon Blanc grapes themselves. The wine is grown on soils of caillottes, griottes and marl and is characterized by natural minerality. After the grapes have been picked by hand, their expressive character is refined through precise vinification in barrels, amphoras and stainless steel tanks, followed by a six-month aging process.
