About the wine

Couvent des Jacobins A convent in other words, monks who grew wine here in St. Emilion on the right bank of the Dordogne as early as the 13th century. Religion is, of course, no longer the case here, the French Revolution, even more so with wine. The winery includes 11 hectares of different terroirs, from sandy clay to solid limestone rocks. The individual plots planted on average 40 years ago are currently converted to organic viticulture and fermented separately in cement tanks, the young Petit Verdot in oak barrels. Half of the aging takes place in new oak barrels, so that the various terroirs and the high grape age produce beguiling wines, pleasurable, playful, almost loud and yet with a sensitive side

Tasting note

The palate shows his humane side, how good it is, powerful, rich and soft the fruit, but it is worked out, it also walks tight, backbones, bites through, the tannins tart, firm, it also grips it for a long time. Wonderfully classic, now with youthful fruit, but it has flesh and it has bones, it develops magnificently!

Vinification
Selective reading and sorting by hand. Cold maceration of destemmed berries for up to 5 days, then maceration for up to 25 days 30 days in cement tanks, aging for 12 months to 20% new and 80% one-year old barriques.
