Elegant Pinot Noir from Languedoc with aromas of strawberry, sour cherry and fine spicy notes. Balanced, sophisticated on the palate and with a long, complex aftertaste. Tasting note
Color: bright, medium intensity Bouquet: elegant and complex, with aromas of strawberries, sour cherries and sweet spices. Palate: balanced and elegant. Long and complex aftertaste.
Culinary recommendation
Goes well with sausages, grilled meats, game, terrines, stews and soft cheeses. Delicious with fruit desserts
Vinification
Careful selection of the best grapes after a mechanical harvest at night to avoid oxidation and preserve maximum fruit character. After destemming, the harvest is subjected to cold maceration before fermentation at 10 °C. Fermentation then takes place at 25°C. Ageing: 30% of the wine ages in French barrels for 4 months.
