About the wine

Hans Nittnaus is a thought leader, a visionary, and a gifted winemaker. Anita and Hans run the 30-hectare winery biodynamically, the wines are full of life, extremely precise and completely unvarnished, also thanks to the very careful use of wood and the very moderate extraction. His son Martin goes even further towards minimal intervention. Fining, filtering, even the addition of sulfur are questioned here. Tasting note
Breakfast at the mountain lake. It is fresh, wide, the view of the mountain, the mineral tones, the meadows, grassy, straw-like, but also creamy, warm, butter, nuts, slightly floral around it and of course the bright fruits, pears, apples, and such a beautiful expanse. On the palate, this relaxed freshness into the day, the gentle warmth of a morning sun in the fresh air, sweet, tart mineral, the rock, and yet so calm, relaxed, balanced, the whole atmosphere. What a wonderful moment, this healthy energy, this anything but hectic vitality. Sooo good!
Culinary recommendation

Vinification
Selective reading by hand. A quarter with mash fermentation, fermentation with the vineyard's own yeasts, aging and maturing for 12 months on fine lees.
