Vinification
It can take up to 6 years before we have the perfect coffee beans for the coffee liquor. That's a pretty long time for a drink. And why? The coffee cherries are grown in shade, which simply takes much longer than growing them in the sun. Coffee cherries? Am I drinking fruit now? No - the cherries are just the protection that preserves our valuable beans. Our coffee cherries then grow into beautiful dark red cherries, and then they're ready to be opened.
