Tasting note
Even on the nose there is a complex scent of red fruits, cherries, raspberries, herbs and the tickling of minerality. On the palate, on the one hand, with drinking flow, on the other hand, this Burgundian complexity, with lively acidity, fine-grained tannin and great saltiness.
Culinary recommendation
Goes well with game, duck, beef bourguignon, mushroom dishes.
Vinification
Spontaneous fermentation, open mash fermentation for 12-15 days with regular, gentle battonage. Matures in 1/3 new and 2/3 used wood.
