Tasting note
Born in Lebanon, Mounir Saouma is a terroir winemaker who couldn't be more French. Together with his wife Rotem, an Israeli woman, he makes highly impressive Burgundy wines. Together, in the Châteauneuf-du-Pape region, they also cultivate exciting and exciting wines such as Inopia, a blend of the region's typical varieties. The Latin term Inopia stands for “omit, make room for the essentials.” The wine matures in large barrels or “cement eggs” and is neither moved nor filtered during the entire 18 months of aging. Simply great in its simplicity.
