About the wine
Spontaneous fermentation, long yeast storage, unfiltered, often unsulphurated - that too is not announced cries out in the market. Selective reading by hand. Low-temperature fermentation with the vineyard's own yeasts in steel tanks, yeast storage for 10 months, minimal filtration and sulfurization.
