Tasting note
Aromas of fresh wild strawberries, cranberries and sweet spices fill the glass and immediately recall the nostalgia of summer days. An outbreak of pomegranate leads the palate to full and lively aromas and ends with a nice balance of acidity. The long, luxurious mouthfeel makes you want a second glass.
Culinary recommendation
Goes well with dishes with trout or salmon. As a vegetarian alternative, the wine is a great accompaniment to beetroots that have been roasted in the oven or to beetroot carpaccio. But it also goes fantastically with raw marinated strawberries or strawberry compote.
Vinification
The grapes were gently pressed at low pressure to obtain a lighter color. The juice was transferred to a stainless steel tank, where tannin was added instead of sulfur to protect the wine. Spontaneous fermentation (wild fermentation) took place without any further additives. Fermentation in the tanks took place at a cool temperature.
