Vinification
Cold maceration, 50% natural fermentation at 26°C to 28°C, the remaining 50% with yeast addition at 22°C to 24°C, 10% mature for 9 months in oak barrels (from 3 years), 90% in tanks on fine yeast — blending and bottling.
