Culinary recommendation
Goes well with apéros, oysters, fried fish and chicken.
Vinification
The almost ripe grapes are harvested quickly and carefully processed. The must ferments at a controlled temperature of 18 degrees. Some of it is filled into small wooden vats. A long maturation process begins until fermentation is complete. The cuvée is produced in spring and tasted by a group of experts. It is then bottled. Bottle fermentation 36 months.
