Tasting note
The grapes are fermented spontaneously. The wine is aged half in used barriques and in concrete eggs. Crunchy aromas of gooseberries, white currants and kiwi. Floral-fragrant with delicate elderflower notes and subtle exoticism. Fresh, with good taste on the palate, yet showing fine meltness.
Culinary recommendation
Goes well with a variety of asparagus and other vegetable dishes, but also with fish and seafood.
Vinification
A few words about vinification: Slow fermentation in stainless steel tanks at a cool 13-15°C, without biological acid degradation. Ageing for 6 months at 60% in used barriques and 40% in steel tanks.
