Tasting note
Purple. Aromas of cherries, grenadines, berries, almonds, violets, rose petals. Powerful and dense on the palate, with notes of coffee and caramel. A lot of priory.
Culinary recommendation
It goes well with dishes such as grilled red meat, game, hearty stews and aged cheese. Its structure and complexity complement rich and spicy dishes particularly well.
Vinification
The grapes are carefully picked by hand and fermented in new and second-filled French oak barrels and clay amphoras. The maceration period is between 25 and 32 days. The wine is then aged in the same barrels for 13 months. It is bottled unfiltered and unembellished. Production is limited to less than 2,000 bottles
