Tasting note
Deep, youthful red color. Bright aroma of red berries and dusty spices, typical of the higher Helderberg slopes and some fynbos/herbaceous character. Intense, yet subtle and complex. Elegant, full on the palate with a velvety texture and lots of red berries, fruit cake and spicy notes. Long dry finish.
Culinary recommendation
Goes well with a dry-aged club steak from the grill.
Vinification
The grapes were picked by hand, 100% destemmed, slightly crushed and transferred to open gaetanks. Fermentation took place spontaneously at max. 30°C for 15 days, with regular push downs, depending on the plot. The wine, together with the single pressing, was then given to malolactic fermentation in French oak barrels, 35% of which were new. The expansion took a total of 22 months and the Cabernet Sauvignon was bottled unfiltered by hand.
