Tasting note
It first smells ethereal of orange blossom, then of sea breeze and salty peach, then fades into deeper tones of dried mango and dulce de leche. The palate is dry, structured and chalky. The wine is as complex as origami, folding and layering in itself while revealing the purity of white peaches on the mid-palate, followed by grapefruit, green pistachio and ginger cookies. Rocky and concentrated with a long, mineral finish.
Culinary recommendation
Fantastic wine with a Carabiniero Cerviche with date tomatoes and anise.
Vinification
The fruits for this vintage were picked from a venerable old vineyard in the Franschhoek Valley. Planted in 1942 and 1962 on alluvial soils of decomposed Table Mountain sandstone, some — about 15 percent — of the bush vines mutated naturally into Semillon Gris. Both variants were harvested and compounded for further complexity of the wine. On February 4, 2020, the grapes were harvested, sorted and pressed using a gentle champagne cycle without enzymes with minimal use of sulfur. The deposition took place overnight and spontaneous fermentation took place in tanks with naturally occurring yeasts. After about a third of fermentation, the must was transferred into French oak barriques with second and third fillings and then aged for 11 months. There was no batonage, and malolactic transformation was prevented to ensure that the wine retained its excellent natural acidity.
