Tasting note
Sparkling wine with a deep straw yellow color that tends towards gold, with a fine and persistent perlage. Nose: intense with characteristic scent of Malvasia di Candia grape: apricot, yellow peach, candied citrus fruits as well as floral and herbal notes such as sage. It is sweet on the palate, but fresh and balanced at the same time.
Culinary recommendation
Goes well with dry pastries and baked goods (panettone, colomba).
Vinification
Cryomaceration. Gentle pressing, cleaning of the must by static decanting. The must is kept cold until the second fermentation. Marinotti method. Refinement 3 months in bottle
