About the wine

Couvnet des Jacobins A convent in other words, monks who grew wine here in St. Emilion on the right bank of the Dordogne as early as the 13th century. Religion is no longer the case here, of course, the French Revolution, and all the more so with wine. The winery includes 11 hectares of different terroirs, from sandy loam to massive limestone rocks. The individual plots planted on average 40 years ago, currently converted to organic viticulture, are fermented separately in cement tanks, the young Petit Verdot in oak barrels. Half of the ageing takes place in new oak barrels, so that the various terroirs and the high Rebalter produce beguiling wines, lustful, playful, almost loud and yet with a sensitive side!

Tasting note
He is not yet a biblical monk, except perhaps something earthly seductions... There is young lust and joie de vivre in it, no sign of renunciation at first, rich, juicy present dark purple fruit, it shows cream, coconut, but not cheap, the dark is lived here, a deep character emerges from itself. On the palate, too, this lustful fullness, quite unabashedly dense dark fruit, but then also followed by a certain moderation, recurring seriousness, more austerity, tannic structure, now consolidated but not forgetting this beautiful devotional moment, ends beautifully on the ripe, rich fruit. Will mature nicely over the years!
Culinary recommendation
Recommended by Flaschenpöstlern: Couvent des Jacobins AOC Saint-Emilion Grand Cru goes perfectly with poultry, slightly spicy red meat and duck.
Vinification
Selective reading by hand. Maceration of the de-stemmed berries for up to 30 days in cement (Merlot, Cabernet Franc), oak (Petit-Verdot), maturation for up to 15 months in new and annual barriques, cuveetization for several weeks in cement.
