About the wine
If we can offer something special for Christmas 2021, it's this dominant Cabernet Sauvignon 2019 Clar del Bosc. You can describe nature in Catalonia with words such as barren. However, the Spanish winery Bodegas Juan Gil is trying to express the beauty of its homeland with this red wine. We think he succeeded! Culinary tip from Flaschenpost team: This Cabernet Sauvignon is ideal to be served with red meat or Gruyère burgers.

Tasting note
The new top wine from the Gil Family from Priorat! The wine has notes of licorice and fennel, typical of this area, which gives it a very Mediterranean profile, and shows concentration, maturity, balance and acidity. The polished finish is long and persistent with elegant tannins. Very limited 1st edition, so buy it now!
Culinary recommendation
Our recommendation: The ideal drinking temperature for the red wine is a slightly chilled 14°-17°C. Flaschenpost team recommends this Clar del Bosc to accompany pizza with mushrooms, red meat and ribeye steak.
Vinification
Planted on terraces of blue slate and quartz soils known as llicorella, among pine and olive trees, the vines grow near the estate with very low yields to ensure that the grapes arrive in optimal conditions. The hand-picked grapes are fermented separately in small open stainless steel tanks of 15 & 30 HL and some in 500L French oak barrels. Each grape variety is aged separately in French oak barrels with 600, 300 & 225L capacity for 12 months and finally blended.
