Vinification
To preserve their natural freshness, the grapes are harvested at night. Cold maceration of the mash for 3 days. Each type of grape is vinified individually. After temperature-controlled fermentation for 6 days at 22 to 24°C, the wine is stored in new concrete tanks for 4 months
