Tasting note
On the nose, you are dealing with a diverse, slowly opening and subtle aroma: it contains smoky, mineral notes as well as citrus notes, white flowers and pepper. On the palate, it gets down to business. Density and energy go hand in hand, the texture is rich and puristic, and the range of aromas is complemented by oats and wet stones. It almost goes without saying that locating the aromas is just a snapshot. Because Richard Kershaw's Chardonnay is certain of a long and exciting future.
Culinary recommendation
Goes well with walleye or pike on sauerkraut with grapes and bacon.
Vinification
For the production of Kershaw Elgin Chardonnay, the Dijon clones CY76, CY95, CY96 and CY548 with low read yield were used, which were developed at the University of Burgogne in Dijon. The grapes were selected from 8 small plots. With his award-winning Kershaw Elgin Chardonnay, Richard Kershaw is making a real splash not only in South Africa but also internationally in the wine industry. The grapes for this first-class Chardonnay were harvested by hand on an early autumn morning and transported in 10 kg steps, which were immediately emptied into the press upon arrival at the winery, where they were pressed all over the bundle. The pressing yield was low at 590 l per ton of grapes. The juice flowed directly into the keg with the aid of gravity (without any use of pumps). No enzymes, yeast cultures or acid were added to the unclarified juice and was thus subjected to spontaneous fermentation. The wine aged in French oak barrels for 4 months before sulfurization was carried out with great care and aged in barrels for a further 7 months. 42% of the barrels used here were new wood, the remaining portion of second-and third-coated wood. Each bottle was given its own unique code.
