Tasting note
The nose shows pleasant aromas of panna cotta, blossom honey, lilac, salted lemon and dried herbs. On the palate, Chardonnay is medium-bodied, with lively acidity and a long, salty finish.
Vinification
After manual harvesting, the selected grapes are gently pressed without destemming and then fermented using wild yeasts. The wine is then aged 20% in new French barrels (Taransaud and François Frères) on the lees for 20 months. During this time, biological acid degradation also takes place and yeast infusion (bâtonnage) is used regularly. After a short storage in stainless steel tanks, the wine is bottled without filtration.
