Tasting note
Rich bouquet with notes of bananas and ripe apples, aromatic yet subtle, well structured on the palate, dry-aged and freshly woven, not too strong, but very fruity and persistent.
Culinary recommendation
A classic with fish, goes well with starters and mild cheeses. Excellent aperitif.
Vinification
Hand harvest of the best grapes after reducing yields in summer. Pneumatic pressing. Temperature-controlled fermentation in stainless steel with pure yeast and frequent batonnage, followed by brief refinement on the yeast.
