Tasting note
The Sauvignon Castel Ringberg glows in a thick, strong straw yellow. The bouquet is characterized by fruity aromas of gooseberries and papaya as well as floral notes of elderflowers. Wonderfully harmonious on the palate with pleasant freshness, stimulating structure, elegant fullness and juicy minerality.
Vinification
After gentle pressing and static clarification, some of the grapes ferment in steel tanks at a controlled temperature of around 18°C. 15 percent of the wine is fermented in French Allier oak barriques followed by biological acid degradation. Assembly takes place in spring.
