Tasting note
On the nose, with complex and slightly oxidative aromas of ripe apples, candied fruits, honey, hazelnuts, pastry and baking yeast. Full bodied on the palate with a juicy and broad mouthfeel and a strong, long finish.
Vinification
This pure Pinot Meunier is made up of 50% from the 2018 vintage and 50% from the eternal reserve wine, a Solera that began in 1992 and consists of more than 20 harvests. The base wine is fermented in steel tanks without malolactic fermentation; after the tirage, the Semper Fidelis matured “sur lattes” for 72 months. The dosage is Extra Brut and is 5 grams.
