Sometimes champagne, sometimes Burgundy - many cellars still have two exits, one for Burgundy, one for Champagne - that is the story of Les Riceys in Côte de Bar in the south of Champagne. It's no wonder that Alexandre Bonnet not only offers great champagnes but also great white, rosé and red wines. And anyone who has such a story is also living it. The vineyards are preserved in their entirety - trees, flowers, bushes are planted - organic and biodynamic farming, of course - and old stone dwellings are being restored. In the cellar, before the long yeast storage period, the wines undergo malolactic fermentation through a unique, beguiling combination of mineral tension and gentle palate. Big
