Selective reading by hand. Fermentation in small wooden barrels with a pied de cuve from the vineyard's own yeasts, aging of the base wine for 10 months on the yeasts, after the second fermentation on the bottle, aging for 80 months on the yeast. Vinified without fining or filtration. Dosage 0 g/L
