About the wine

99% of the wine is fermented white, 1% red wine is added to the white base wine to give it the seductive shimmer of a fresh rose. 20 to 30% of the wine comes from the “Réserve Perpétuelle”, which Taillet has renewed every year since 2011 with a portion of new wine to obtain a base wine that has an unprecedented aromatic complexity after bottle fermentation.
