Tasting note
El Cid, the mercenary - Carrying the dust and scents of his migration, lots of spice in the nose, cocoa bean, dark caramel, smoke and black pepper, courage and seriousness in the heart, powerful red and dark fruit, strawberries and dark cherries, paired with a vegetable-tart touch, tomato leaf and wet undergrowth. Crunchy and firm on the palate, with lots of pull and strength, the tannins present, very fine, with lots of pressure and length, it literally flies over the palate, so elegant, delicate and also so lasting.
Vinification
Without pumping, vinified only with gravity, fermentation with the vineyard's own yeasts and aging in new and used oak barrels, before bottling, also without pumping, the wine rests in steel tanks. No fining, no filtration.
