Tasting note
The “Carmel Limited Edition” has a deep purple color and impresses with hints of ripe plums, cassis, violets, mint and tobacco. This wine has elegant, delicate and harmonious aromas, which are significantly enhanced by Merlot. The character of the wine reflects the “old wine” style, which is expressed in the balance between fruit, tannins and acidity. It is full-bodied and rich, with a long and balanced finish.
Culinary recommendation
Goes well with grilled lamb chops, beef bourguignon and hard cheese.
Vinification
The wine consists of a grape blend of the varieties Cabernet Sauvignon, Merlot, Petit Verdot with a bit of Malbec. The vineyards are located in the cold regions of the Upper Galilee, at altitudes of 400 to 850 meters, where snow is not uncommon in winter. The mild temperatures and low humidity in summer are ideal for growing quality grapes. The various juices were stored separately for 8 months. After the final blend has been decided, the wine is aged in oak barrels for a further 8 months. The wine ages in French oak barrels for a total of 16 months.
