Tasting note
Red cherry, with a high layer that maintains purple tones on the edge. The nose is complex and highlights the notes of black fruit, flowers, balsamic and scrub. With its floral notes and lively acidity, which is due to the altitude at which these old vines grow in the mountains of the Castilian Plateau, it is strongly reminiscent of the typical nature of the region. It is an authentic and complex wine.
Culinary recommendation
Perfect with hearty meat dishes such as lamb chops, beef tenderloin or braised beef with herbs. It is also delicious with game (e.g. deer or deer) or mature hard cheese.
Vinification
Manual reading in 11 kg boxes. Maceration before fermentation in a cold room (5°C) to reinforce the fruit character of the wine. The grapes go through a double sorting table. Alcoholic and malolactic fermentation in stainless steel tanks. Followed by 14 months of aging in second-use French and American oak barrels.
