Tasting note
Strong, dense ruby red. Intense scent of dark, small, ripe berries, warm spices, some violets and undergrowth. Rich and rich on the palate. Present tannins, fine-grained and of good quality. Perfectly integrated and integrated acid typical of Nebbiolo. Elegant, multi-layered structure The aromas of the nose are repeated. The aftertaste is long and aromatic. Promises good storage potential.
Culinary recommendation
An elegant companion to brasato with polenta.
Vinification
The grapes from the individual Ovello vineyard are picked by hand, gently pressed and the mash is then fermented in steel tanks. The young wine is aged in large wooden barrels for 36 months. It is then aged in the bottle for a further eight months. Only in particularly good years are these riservas produced from the top individual sites, which are among the best in the region.
