About the wine
The roots of Cantina il Cavaliere (The Knight) go back to 1895. Today, the company is run by Roberto and his wife Tiziana Belossi. A modern winery and the necessary expertise from the team of oenologists create wines of exceptional quality. The vines cover almost twelve hectares. More than 95,000 bottles are filled annually.

Tasting note
Ruby red. Fine scent of plums and blueberries. Vanilla and honey aromas with subtle roasted aromas. Very pure and powerful on the palate, perfect tannin structure.
Culinary recommendation
It goes particularly well with Ticino cuisine, but also with vegetarian dishes. Also perfect with barbecues and cheese.
Vinification
Angaben über Vinifizierung: Handlese bei optimalem Reifegrad der Trauben. Alle 30 Minuten sanfte Pressung und Abbeere in thermoregulierten horizontalen Vinifikatoren. Anschliessend wird die Maische auf 26°C erwärmt, um die Farbe zu extrahieren und die alkoholische Gärung zu beginnen Mehrere verschiedene Zyklen der Verarbeitung der Schalen, um die Tannine zu erweichen.
