The alcoholic fermentation of the clear must then begins, which takes place at low temperatures (15-17 °C) for 15 days. Winemaking takes place in stainless steel tanks. The temperatures are low, which avoids malolactic fermentation. After fermentation, the wine rests on the noble yeast and is rolled more regularly.
