Vinification
The wine is spontaneously fermented with ambient yeasts and matures in 500-liter oak barrels for 12 months. Borja works in the cellar with as few procedures as possible and does not use pure yeast, enzymes or other additives. Only before bottling is a small dose of sulfur used to stabilize the wine.
