Tasting note
AIX White presents itself with a pale straw color, with delicate green nuances that reflect its lively, aromatic and fresh character. The aromatic bouquet immediately captivates with a tempting mix of fresh citrus blossoms, exotic fruits and ripe pears. Subtle undertones of white peach and apricot blend with delicate floral notes of jasmine and honeysuckle, creating an inviting and complex aroma profile. On the palate, this wine is fresh and perfectly balanced. Bright aromas of lemon peel and grapefruit are in the foreground, followed by a touch of juicy melon and salty minerality that add depth and character. The medium-bodied palate has a pleasant texture, with nuances of grapefruit, almonds and a touch of honey, which give it complexity without losing freshness.
Vinification
The grapes were harvested in the coolest hours between 4 and 9 o'clock in the morning to ensure optimal freshness. This preserves the delicate aromas and minimizes the risk of oxidation. The whole grapes were pressed directly at less than 1 bar. The must was kept at 3°C for 5 days to extract a maximum of the aromatic components, followed by fermentation in stainless steel tanks at 15°C.
