Tasting note
AIX Rosé impresses with its enchanting salmon-pink color. On the nose, it offers an aromatic and fresh bouquet, while on the palate, crisp red fruit notes with pronounced depth and complexity as well as some spicy, peppery nuances of Syrah appear. The acidity is wonderfully integrated, provides a subtle balance and results in a long, crystal-clear finish. The rosé shows wonderful freshness, a distinctive mineral character and the remarkable quality of Syrah, which makes it a truly exceptional Provence wine!
Culinary recommendation
Perfect as an aperitif and with Mediterranean dishes such as antipasti, grilled vegetables or seafood. It goes particularly well with fish dishes, sushi or grilled white meat. Also with summer salads or Provençal cuisine.
Vinification
The grapes were harvested in the coolest hours between 4 and 9 o'clock in the morning to ensure optimal freshness. This preserves the delicate aromas and minimizes the risk of oxidation. The whole grapes were pressed directly at less than 1 bar. The must was kept at 3°C for 5 days to extract a maximum of the aromatic components, followed by fermentation in stainless steel tanks at 15°C.
