Tasting note
Bright purple color On the nose, spicy dark berries and cherry stones, with a peppery nuance that provides a spicy boost. Mineral and concentrated on the palate, with aromas of sour cherry and cassis and a touch of medicinal herbs. With air, it gains sweetness and ends precisely and long, with sneaky tannins providing grip.
Culinary recommendation
A very versatile wine that, due to its fruitiness and freshness, goes very well with almost all types of meat and vegetables.
Vinification
Selection in the field. Harvest by hand in 18 kg plastic crates. Sorting table is used. Low-temperature skin-contact maceration. Spontaneous alcoholic fermentation in stainless steel at controlled temperature. Regular pumping and cutting is carried out. Coupage of various plots and malolactic fermentation in tanks. Aging in used 500 l French oak barrels for 12 months. Bottled in January 2023 in Fruit Day. Wine rounds in the bottle for at least six months.
