Vinification
Spontaneous fermentation with indigenous yeasts at an average temperature of 24ºC in a concrete tank. Malolactic fermentation. Aged in French barrels of 228 liters for 15 months. 5% of the barrels are new, the rest are 3, 4 and 5 years old.
