Tasting note
A dessert wine with a strong golden yellow color. The bouquet is extensive and complex with notes of honey and dried fruit. The taste is well-structured and pleasantly sweet.
Culinary recommendation
Goes well with sweet temptations or characterful cheeses such as taleggio or gorgonzola.
Vinification
The grapes are harvested at various times and carefully sorted. The harvest is laid out on reed mats for one to three months and dried. After pressing, the concentrated must is fermented, aged and aged in small, sealed wooden barrels (“Caratelli”) of 50 to 200 liters. The wine ages in the “Caratelli” for at least three years.
