Vinification
A few words about vinification: Autochthonous Timorasso grape variety, hand-picked, cold macerated overnight and then gently pressed. Gentle fermentation for four weeks in various stainless steel containers, large wooden barrels and ceramic. In these vessels, the white wine matures for 10 months on the fine yeast, which is stirred regularly (battonage).
