Tasting note
Brilliant straw yellow and intensely scented of peach, honey and herbs: mineral and juicy with a soft finish.
Culinary recommendation
Goes well with raw seafood, sushi, light fish dishes or vegetable dishes, fried white meat, crap scrapers.
Vinification
The grapes that are harvested for Clos come from the 18-year-old Sos Ruos vineyard. Immediately after harvesting, the grapes are carefully crushed. This is followed by 24-hour cold maceration before pressing with pneumatic presses. The clarified must then undergoes a long fermentation at 15°C.
