Tasting note
Elegant and lively perlage. Intense, aromatic bouquet, a pleasant fruitiness on the palate, but not sweet. Round, with notes of yellow fruit, pear and fresh flowers. The excellent alternative when Prosecco Brut tastes too dry.
Culinary recommendation
Goes well with an aperitif, panettone or spicy dishes from the Far East.
Vinification
The harvest is followed by the gentle pressing of the Prosecco grapes. Subsequent fermentation of the must in stainless steel tanks with the development of carbonic acid under strict temperature control. The yeast deposit is removed by filtering before bottling. In contrast to Prosecco Brut, Prosecco Extra Dry is dosed with a little sugar so that it looks fruitier.
