Culinary recommendation
Goes well with vegetable terrine, artichokes à la Provence, Asian dishes, white meat, poultry, fish, crustaceans and seafood.
Vinification
Manual harvest with selection, partly whole berry pressing, cold maceration at 5 - 8°C for 10 days, alcoholic fermentation for 3 - 4 weeks at 20 - 25°C, aging on fine yeast for several months, storage for 18 months in oak barrels.
