Tasting note
Complex bouquet with aromas of ripe fruit, wrapped in spicy notes. A tart yet velvety red wine, with a rich structure, and a harmonious, long-lasting finish dominated by liquorice notes. Strong ruby red, with garnet reflections.
Culinary recommendation
Goes well with dried meat, venison, lasagna, café de Paris entrecote, zampone, grilled wild boar, venison.
Vinification
Angaben über Vinifizierung: Die Rebberge liegen auf rund 400m über Meer und sind rund um die Stadt Montefalco angelegt. Die Reben wachsen im Cordon Erziehungssystem. Die Lese findet Ende September statt, darauf erfolgt eine traditionelle Vinifikation und der Ausbau des Jungweins während total 30 Monaten, wovon 12 Monate in Holzfässern. Der Name Fidenzo kommt von San Fidenzio, einem Bischof und Märtyrer und zugleich der Name der Abtei in der Nähe von Massa Martana, abgebildet auf dem Weinetikett.
