Tasting note
An intense and concentrated wine with a deep ruby red color. The scent is characterized by ripe red fruits such as cherry and plum, accompanied by a slight spiciness and subtle notes of tobacco and spices. On the palate, it is full-bodied and harmonious, with soft tannins and a pleasant freshness. The finish is long and round, which is indicative of the traditional Appassimento method.
Culinary recommendation
Goes well with grilled meat, aged cheese or hearty pasta dishes.
Vinification
The grapes are dried on straw mats for several weeks to increase the concentration of aromas. After gentle pressing, fermentation takes place in stainless steel tanks, followed by aging in French oak barrels.
