Tasting note
Deep, dark red in the glass with notes of sweet black cherries, licorice and a hint of violet on the nose. On the palate, aromas of spicy plums and red raspberries develop, rounded off with typical strong tannins. Can be stored for 5-8 years
Culinary recommendation
Goes well with grilled lamb chops or pork tenderloin mignon.
Vinification
The Tannat grapes were destemmed, lightly crushed and fermented in stainless steel tanks. Gentle pumping was carried out three times a day. The wine lingered on the mash for a long time to polymerize the tannins and give the wine dark, breaty aromas and color. For malolactic fermentation and aging, it was transferred to French oak barrels, where it was stored for 16 months before being bottled.
