Vinification
SOY is the name of the great wine from Bodegas Gratias, which is made from the best selected bobal grapes. Half of the harvest was de-stemmed, the second half fermented as whole grapes. The wine was then aged for eight months in used French oak barrels. The SOY series comes in three garments, as the vines grow on three completely different soils within a very short geographical distance: sand, lime and clay. SOY Caliza grew on limestone soils, which gives the wine its fullness and fruitiness.
