Vinification
The beautifully ripe grapes were harvested by hand, destemmed and then left overnight on the mash when cool and pressed the next day. The fermentation and aging took place partly in ceramic balls and used barriques, for extra aging aroma. A 500 liter Swiss wooden barrel brings the light wood note and the steel tank brings freshness.
